When Did Spruce Get a Michelin Star?

In 2011, two-star Michelin chef Andrew Fairlie opened the doors of his much-anticipated restaurant, Spruce in Auchterarder, Scotland. The restaurant quickly gained a reputation as one of the best places to dine in Scotland and beyond.

After only a few months of being open, Spruce received its first Michelin star in October 2011. It was the first restaurant in Scotland to receive this highly prized accolade.

Michelin stars are awarded by the prestigious Michelin Guide and are highly sought after by chefs all over the world. Chefs strive to achieve a one-star rating before aiming for two stars and then three stars, which is considered one of the highest honors in the culinary world. The awarding of a Michelin star is based on five criteria: quality of ingredients used, mastery of flavors and cooking techniques, personality of cuisine presented on the plate, value for money and consistency between visits.

For Chef Fairlie, receiving a Michelin star was an incredible achievement for both himself and his team at Spruce. He has continued to hone his craft over the years and was awarded a second Michelin star in 2015. This made him only the third Scottish chef to ever achieve such an accolade.
